Ultra Moist Pineapple Upside-Down Cake
A soft, light and fragrant cake with delicious pieces of melting pineapple… perfect for an afternoon snack or dessert
Ingredients
- 200 g of flour
- 150 g of sugar
- 3 eggs
- 100 ml of oil
- 120 ml of milk
- 1 sachet of baking powder
- 1 teaspoon of vanilla
- 200g of pineapple chunks
- 2 tablespoons of pineapple juice
Preparation
1. Prepare the dough
- Preheat the oven to 180°C.
- Whisk the eggs with the sugar until you obtain a frothy mixture.
- Add the oil, milk, vanilla and pineapple juice.
- Incorporate the flour and yeast.
- Mix until you get a smooth paste.
2. Add the pineapple
- Pour the batter into greased molds or one large mold.
- Distribute the pineapple pieces on top.
3. Cooking
- Bake for 30 to 40 minutes until the cake is golden brown.
- Check if it’s cooked through with a toothpick.
Result
An ultra-moist cake with juicy pineapple pieces and a beautiful golden surface.
